GT Food Talk: Mouth-watering Ofe Erurushin (Scent Leave Soup)

It’s Easter weekend, so, what dish or dishes will you be preparing for your family to make it a special and memorable one?

Rice dishes like fried, jollof, white or any other kind of special rice dish is a good idea but since Easter comes once in a year, why not make it special by preparing this special tasty ofe erurushin better known as scent leaf soup. The whole family will sure enjoy this special and delicious soup.

Ingredients

Scent leaves, Orioma seeds, Uda pods, Yellow hot pepper, Onions, Crayfish, Snails

Scent Leaves

Yellow scent pepper

Meat

Egusi (Melon Seeds a fistful)

Dry fish

Palm oil

Orioma seeds

Uda pods

Onions

Crayfish

Snail

Shrimp

Salt

Seasoning

Blended ingredients except Uda pod

Scent leave soup

Method

Blend all ingredients except the uda pods.  Pour all blended ingredients into a pot, also add the blended egusi which will serve as some sort of thickener.

Add half cooking spoonful palm oil, salt and seasoning. Wash uda pod, open and remove the seeds then throw pod into the pot of soup.

Add fish, snails, shrimp, pepper and other ingredients and allow to cook till oil settles on top. And your scent leave soup is ready.

Scent leave soup can be served with eba, pounded yam or fufu.  This soup is not only delicious; it also has some health benefits. It helps stop stomach upset and also clears common cold.

Note that you can add as many ingredients as you want to suit your taste.
