Today, food blogger Sisi Jemimah is showing you how you too can make the ‘perfect’ oven-baked jollof rice with peppered beef for your family and friends.
Whether you’re a lover of basmati, long or short grain rice, you should know that the cooking time varies so that your jollof rice can come out perfect.
Remember, it’s still the same jollof rice you, but, she used a different cooking method.
However, if you’re using long grain rice, you will need to parboil your rice first to speed up the cooking time.
3 cups Rice
1 can of Plum Tomatoes/ 4 Medium Tomatoes
3 Scotch Bonnet (Ata rodo)
3 Medium Size Red Bell Peppers (Tatashe)
100g Tomato Paste
1.5 Cup Beef or Chicken Stock or Water
2 Onions
150ml Vegetable Oil
1 Tbsp Curry Powder
2 Tbsp any seasoning of your choosing
1.5 Tbsp White Pepper
1 Tbsp Thyme
Bay Leaves
Salt to taste
